We're surrounded by farm stands, but sometimes they're inconvenient and the supermarket peaches looked great. Those in this pie had the consistency and taste of wallpaper paste. Even though pie making is not one of my skills I Googled for a crust recipe and mixed it, as instructed, in my food processor.
Sliced the awful peaches and mixed them with lemon juice, sugar and a little flour. Kept them in the fridge while the dough hardened in the fridge. Top crust was fabulous and delicious (what could be bad with a crust containing 1/4 lb. of sugar?) Bottom crust contained the same amount of butter, but was drowned in juice form the peaches, which weren't particularly juicy, so it was soggy. All in all, it tasted good and I resurrected some really bad fruit. Served it with vanilla ice cream. (Actually, I wouldn't call it a pie. It was more like a great big cobbler, a southern tradition around these parts which I avoid like the plague because it tastes and feels like hot glue.)
