I had all the ingredients except the Pine brand glass noodles and substituted Korean Sweet Potato noodles as shown in the picture, putting them in boiling water for 4 minutes, rinsing them with cold water to stop the cooking and draining them while I cooked the rest of the ingredients that I had prepared in advanced (mise en place is important with stir fry cooking!) The addition of canned diced tomatoes gave me pause. I have never put tomatoes in a stir fry recipe. I used Aldi's fire roasted tomatoes - one can drained down to the required 1 cup.
The following picture is my serving. The recipe made two nice-sized portions - one for Bill and one for me. Only thing I would change is to use more noodles...and maybe adjusted the amount of sauce to make up for the extra noodles.
