Naan

Just got a larger tortilla press (recently learned how to make good corn tortillas from "Pati's Mexican Table" on PBS, and learned it could be used for preparing naan dough. Worked like a charm!

Naan with Yeast
Ingredients:
• 3 Cups All Purpose Flour
• ¾ cup Milk (110°F)
• 1/2 Cup Yogurt
• 1 tsp Sugar
• 2 tsp Rapid Rise Yeast
• 1 tsp Salt
• 1/2 tsp Baking Powder
• 2 tbsp Grated Garlic
• Finely Chopped Coriander Leaves (Didn't have any for this batch).

Method
• Add flour to mixing bowl.
• To the flour add salt, baking powder, yeast, sugar and mix well.
• Add yogurt and combine with flour mixture.
• Add warm milk and start to knead the dough until you get soft dough. I used the kneading hook that came with my KitchenAid Mixer on speed 2
• Place dough in bowl and cover with a damp cloth and put in warm place to rise.
• After the dough has risen well, grease hands with oil and start to knead dough again.
• Divide dough in small golf size balls. (I made 10 balls.)
• Dust the surface with dry flour.
• Pat or roll the naan with rolling pin.
• Season the naan with garlic and coriander leaves. I chopped coriander and garlic together and rolled into the top of the flattened dough pieces.
• Roast one side of naan on a skillet. Watch carefully. It will brown fast.
• Then broil the uncooked side of naan in the oven on broil mode. Perhaps 30 seconds is enough.
• Serve hot with a pat of butter on naan! Freezes and reheats well.
Tips
• Use yogurt at room temperature.
• Use warm milk as it speeds up the fermentation process of yeast.
• Watch naan carefully when on broil mode, as it cooks very fast on broil.

When I cut one of these in half I found it had a pocket, just like pita bread! Now I'm going to have to look for a pita bread recipe and try it with the tortilla press (which has to be lined with plastic bags on each side to prevent sticking).

Looks delicious, and the recipe sounds good, but I know I'd never go through all this trouble, despite the fact that I too find cooking relaxing.
