Michael Symon's French Toast

Salivated as I watched him prepare it on "The Chew" earlier this week and knew I had to prepare it. I've made something like this before without the banana topping and with sweetened shredded coconut instead of the chopped almonds, but it was similarly delicious. (Decided to add coconut to the almonds and cornflakes because we liked the coconut flavor so much.)

Notes: I used whole milk, not half and half. used Texas Toast since I couldn't find the suggested breads in Ingle's and less maple syrup because there were going to be just two of us. The picture of his shows just three pieces of banana on top - you're going to want more! Didn't use powdered sugar - thought that was adding insult to injury - enough sweetness in the liquids. Make sure your bananas aren't too ripe - they'll fall apart. Oh yes...milk/egg/ dipping liquid was generous - made enough to soak at least six slices of Texas Toast. AND...having made something like this before with shredded coconut, I added that to the cornflakes and chopped almonds.

Holy Cow, I'm totally speechless ... Lord does that ever look good, to hell with my diabetes, I wanna have some, I agree, for me, the coconut does it ... maybe with saccharin instead of sugar! LOL
