Thought it was a chicken leg, huh? The other pieces I cut were more traditional rectangles, but we've already eaten those!
A couple of years ago I learned about a great recipe coating egg/milk/etc. dunked bread with crushed Corn Flakes and shredded coconut. I loved it fried with lots of butter.
This morning I looked at the remainder of a delicious loaf of white bread made in my breadmaker (recipe from the back of the flour bag), and thought I sure would love that Corn Flake and Coconut French toast, but alas, no Corn Flakes.
Did find some aged Raisin Bran and decided to try that. I put it into my Magic Bullet and almost pulverized it, then combined it with sweetened Baker's Coconut shreds.
When I dipped the soaked bread into the crumbs I pressed hard to make sure the cereal/coconut mixture would adhere well.
Fried it in lots of butter (so I'm not a saint) and oh boy, was it good served with maple syrup.
If there's one thing good about this recipe (other than the taste) it's that bran flakes are a bit more nutritious than Corn Flakes.
