~ Vegan Peanut Butter Spelt Cookies ~
2.5 C unbleached spelt flour or 2 C spelt / .5 C garbanzo
2 tsp baking powder
1 tsp baking soda
4 tbsp raw cane sugar
1/2 tsp sea salt
2/3 C + 4 tbsp organic peanut butter
1 C maple syrup
1/2 tsp blackstrap molasses
2 tsp pure vanilla extract
4 tbsp canola oil
1 C whole peanuts
1. Preheat oven to 350 degrees F.
2. In a bowl, sift in the flour, baking powder, and baking soda. Add the sugar and salt and stir completely
3. In a separate bowl, combine the 2/3 cup of peanut butter with the maple syrup, molasses, and vanilla, then stir in the oil until well combined
4. Add the wet mixture to the dry and add peanuts, stir through, and as it is coming together, stir in the remaining 4 tbsp of peanut butter (not completely; leave bits of pb throughout the batter)
5. Place large spoonfuls of batter on a baking sheet, and press with the tines of a fork to flatten gently and give that classic pb cookie look
6. Bake for 11 minutes, until just golden
7. Let cool for no more than 1 minute on the sheet (to prevent drying out), then remove them with a large spatula and transfer to a cooling rack
