Tomato Pie by Rachel

Tomato Pie
1 deep dish pie crust
3 cups sliced tomatoes
1 cup green onions, diced
basil to taste
salt to taste
pepper to taste
3 tablespoons of mayonaisse (this part is up to you)
1 package shredded Mexican Cheese

Bake pie crust following directions on crust package. I buy Pilsbury crust and you cook the crust for 11-14 minutes on 400.

Layer tomatoes and onions
in pie shell. Sprinkle salt, pepper, and basil (to taste) over top of tomatoes & onions.

If you want to mix the mayo in with the shredded cheese, you may do so, otherwise spread cheese over top.

Bake at 350 degress for 30 minutes or until cheese is melted over mixture.

My SIL makes a similar pie, except that she adds sauteed onions. I've been wanting to get her recipe but will have your's now!

Thank you, Rachel. One of my favorite dishes at the Green River Barbecue restaurant in Saluda, NC is their tomato pie which is entirely different - I think it's made with bread, cheese and lots of butter. I'm definitely going to try this! What type of tomatoes do you use?
