Assemble and prepare butter, brown sugar and lemons listed below separately for each of the two 9" cake pans or 9" skillets, or double ingredients for one large skillet or 13X9 cake pan.
Ingredients for one 9" pan--
4 tablespoons unsalted butter
3/4 cup plus 2 tablespoons light brown sugar
2 thin-skinned lemons, sliced paper-thin crosswise, seeds discarded
Pre-heat oven to 350 degrees. Set a 9" cake pan or skillet over moderate heat. Add 4 tablespoons of butter and when it is melted, stir in the brown sugar until dissolved, about 1 minute. Remove from the heat. Arrange the lemon slices in the melted brown sugar.
Mix a box of yellow or white cake mix according to package directions. Bake for approx 30 minutes or so until toothpick inserted in center of cake comes out clean. Let cool in pan 15 minutes, then invert onto a plate or platter. Serve warm or at room temp with whipped cream if desired.
