-First make sure you get really green plantains. To peel them, put them under running hot water for a while, then make slits from one side to the other in several places. Use a knife (not sharp) and place it under the peel and gently pull it out.
-Cut in about 1 inch slices. You can cut them a little diagonal to make it easier to crush later on.
-Fry in medium heat, until you can pinch them with a fork (soft inside)
-Take out and crush flat. As you can see, I have a plantain press, but you can even use your hands with some thick paper in between, be creative:-)
-Once they are crushed, you can fry them or put them in the freezer.
-Fry at medium high heat, until they start browning. Make sure the oil is hot.
-Use paper plates and paper towel to absorb the oil.
-Sprinkle with salt. Some people make some ice water with salt and place them there, before frying. It's supposed to make them crispier, but beware of the oil splattering.
-You can make them the size and width you like.
In the picture, you can see the plantain press. Half of the pieces are not crushed yet and the other already have been crushed. The other photo is when they were ready to be eaten:-)
