The wooden racks are for sun-drying "Shrimp Paste".
Ma Wan is one of the rare places that is still using the traditional way to produce shrimp paste.
Shrimp paste is a common ingredient used in Southern Chinese cuisine.
The Kap Shui Mun Bridge (in the background) together with Tsing Ma bridge,
forms an expressway for the Hong Kong International Airport.
