Chiles en Nogada is a stuffed chile dish (chile relleno). The name comes from the Spanish word for the walnut tree, nogal. It consists of poblano chiles (stuffed) or filled with a mixture of about 19 ingredients. The filling mixture usually concists shredded pork, aromatic herbs, fruits and spices. GREEN chiles topped with a WHITE walnut-based cream sauce, called nogada, and then RED pomegranate seeds, give it the three colors of the Mexican flag. VIVA MEXICO
