I wanted to shoot some photos of a bakery still in operation and I found this one. They were baking for the military only. Typical of Sarajevo in the early days of the seige, nobody asked any questions when I walked in and started shooting pictures. Two years later the bureaucracy had dug in and they became a real pain in the neck. This trio was impressive. Their big vats were designed for heavy duty mixing machines, but they were mixing the dough by hand. The guy on the left said "We're real bakers again!" Their bread was fabulous.
