The coal seams in these rocks were mined out by the Romans (I'm sure I read that - somebody correct me if i'm off track) - this is where the rock structures that contain the Lothian coalfields meet the sea (well at surface level). See here for more detailed geological information.
And more recently the Pans were used in the production of salt. By recent we're taking about from the 15th century through to the 1950's. Today only 2 buildings remain on the site of the Joppa Salt Pans - a cottage (oldest building in Portobello) and a hotel (with bar and restaurant). The hotel was originally the house of the salt works owner.
This is unbelievable! This is where my great great grandparents etc. mined for salt! Thank you! This was a very rough life and very few of them lived beyond 30. They left Scotland around 1830.

Hi
I was the owner of the Rockville House Hotel, Joppa Pans for the ten years 1989-1999.
I now live in Sevastopol, Crimea, Ukraine.
I am looking for some detailed history of the Salt Pans for a book I am writing on the Crimea War, and my main character hailed from the Pans, where his father had worked when the Chambers family lived in Rock Cottage, and father was the manager. 1813-1815.
