First of all I make a base by blending a large ripe tomato with some tomato paste (enough to give a good colour), lime juice(1/2 - 1), pinch of salt, and about a half teaspoon of sugar, - all to taste.
Empty this into a bowl and add finely chopped ripe tomato(3), green pepper(1), red onion(small 1), coriander/cilantro leaves(small bunch), and thinly sliced or chopped fresh green chilli (1 or 2 or more - depending on the type of chilli and how hot you like it).
Mix it all together (- being a bit rough with it to release a few more flavours), and leave for a few hours for the flavours to mingle.
Sharp, hot, fresh ... Enjoy! :-)
