So, for years.... the little Godiva Chocolate Raspberry Tuffles have been a favorite of mine....
I wanted to see if I could replicate... (what a foolish girl I am) The Ganache did not set up really firm (which is probably because I used choco chips instead of expensive fancy chocolate... then the problem of the jelly candy center... I took some homemade raspberry jam and added unflavored gelatin... the texture is just about perfect, but the color came out more pink than red... I guess if I wanted to go for the ultimate presentation, I could just add a little red dye number 2 (gads)....
All in all not a bad experiment, but to serve, I think I will need to dip in hard chocolate, as the texture is wonderfully melt in your mouth tasty, but doesn't hold up very well to room temperature....
