Squire Donal here, I was just sittin' around on Sunday afternoon wishin' I was in Key West, to be specific in the Conch Republic. Actually, I was in the Conch Republic, it is a 'State of Mind', you know. So, what better to do than have a Conch Republic smoke off! Now wait a minute, it's not that kind of smoke off! I mean smoke some meat!
To make a long story a little longer, (in my own pedantic way.) I whipped up a temporary smoker and got started. I made a wood fire. (I had some oak stored in Josh's pickup, until his Mom gave the truck away.) Then I threw a brisket on. I just happened to have one pickling in the fridge for 4 or 5 days. So, with everything ready the contest started.
I had a little trouble keeping the smoke going, unlike every other time I cookout. It was touch an go right down to the wire but, in the end I ended up with a fine piece of homemade smoked corned beef, and I won first place in the smoke off. (I was the only contestant! Maybe next time I'll start soon enough to invite more contestants.) Oh, I almost forgot, the meat was conchtastic! See you next time. You have a nice day, what ever state of mind you are in.
