For our re-order of two more each, we asked for the salsa to be left of. Just had them with cilantro and cebolla, and a squirt from the limón.
The salsa had been good, but tended to mask the flavors of the taco fillings.

Fonda "Esperanza's', deep in the interior of the Mercado. It's just one of several very informal and humble eating areas, all operated by apron-clad señoras. Esperanza's is closest to the ramp that connects the Hall of Butchers and Chicken sellers.

Esperanza had a dish which I'd never seen before: Chiles Güeros Rellenos de Queso en Salsa con Tortitas de Arroz.
I'm hoping she has it again next Friday, so I can try it!

Menudo. In spite of Lenten strictures, some folks need their menudo. ("Medical" dispensation?)
At Esperanza's, the tripe is actually simmered in the spicy caldo. That's rarely seen at the menuderías around here. I prefer it this way.
