These are interference fringes between the surface (that you want to measure flatness)
and a microscope slide (the really flat ones can be identified by checking reflection).
For each color the reflection attains minima when the spacing between the slide and the
surface is an integral multiple of wavelength/2. As a result one almost obtains a
height contour map of the surface tested for flatness.
