Day 17 - Happy New Year - Veggie Stock
Day Sixteen - Holiday Baking Part I
PB & J Thumbprint Cookies and Salty Nut Truffles.
Day Fifteen - Candy Canes & Bacon
Bacon finally discovered the candy canes on the lower branches of the tree.
Day - Thirteen - Madras
or Coconut Curry White Chocolate Ganache covered in dark chocolate.
I have learned two important things in my candy exploration. I need a digital thermometer and I need the tools the book told me to get lmao. yea.. Batch 1 = 1/2 failure 1/2 success.
Day Twelve - An Ode to Julia Child
I tried making Julia Child's recipe for Chocolate Almond cake with a Chocolate butter icing.
My god is it amazing.
Day Eleven - Fromage Blanc
So our local CSA - farmersfreshcsa.com/index.php had a Farm day this weekend, one of the places that we visited was the local creamery, Udderly Cool Dairy. Sampled the cheese, met the delightful owners and bought some cheddar, jack and this AMAZING fromage blanc.
Day 10 - Stupid Simple Crockpot Tacos
3 Organic Chicken Breasts
1 16 oz jar of Clean Salsa
Taco Seasoning
Mix salsa & seasoning together.
Place chicken breasts in crockpot, top with salsa mixture. Cook on low for 5 - 7 hours until done. Shred chicken and stir until mixed well with salsa.
Serve w/ soft tacos, shredded cheddar and lettuce.
Day Nine - Chicken Pot Pie
And is DEFINITELY worth the effort. The only difference I made was that I cooked my diced up chicken breasts in diced pearl onions and about a tbs of minced garlic.
Day Eight - Cheddar & Scallion Popovers
from Garden Fresh Meals, by Better Homes & Gardens.
Amazing with eggs & potatoes mixed with butter, lemon juice and chives.
Day Seven - Pizza
My husband is a pizza fiend. No seriously, he's one of those people who would eat it every day of the week if he could.
So once we started on this clean eating thing, I had to find a way to satisfy his(and my if I'm honest) pizza craving. I found this amazing pizza recipe. And it REALLY was amazing. It's definitely going to be a recipe that I make frequently. Not usually a fan of cooked spinach, but it really worked here.
I did make a few changes. I added more cheese, and I added just a touch of organic pasta sauce.
NOM!
Day Six - Eggs & Potatoes.
Last night I made steak & potatoes for dinner. The potato recipe I got from my Garden Fresh Cooking cook book. A very simple recipe that involves teeny boiled potatoes that you mix in a little lemon juice, chives, salt & pepper and butter.
OMG yum.
We had leftovers this morning for breakfast with a sunny side up egg. We get organic farm fresh eggs whenever possible, they taste and look much better than the regular eggs from the grocery store.
Day Five - Crumbs
I had intended to take a photo of the entire slice of banana bread, then I though, hmm, I'll just take a bite and then take the photo.
This was the result.
In other news, clean eating banana bread for the win.
Thanks Opera Girl!
Day Four - Spaghetti Pie
So the ingredients in total cost me about $6.00, give or take. And the recipe took about an hour and twenty minutes to put together, but damn was it worth it.
I did make a few changes like add some diced green pepper and some sliced turkey bacon.
Day Three - Community Supported Agriculture.
I am a big supporter of local farms. I joined our local CSA here in Georgia,
http://farmersfreshcsa.com/ , and highly recommend looking up your county to see if there is a similar service.
This week's bounty from the farms is:
Plum Tomatoes
Seedless Watermelon
Muscadines
Peanut Butter & Chocolate Bars
Blueberry Jam
Green Bell Peppers
All amazing, locally and organically grown(or made with organic products).
Day Two - Monastery Salads
I have this 12 Months of Monastery Salads book that has some of the most amazing recipes, and this is a salad that was inspired by a recipe I found in that book.
Egg & Tomato Salad for 2.
Dressing:
3 tbs Extra Virgin Olive Oil
1 1/2 Tbs Tarragon Vinegar
Salt & Pepper to taste
Dash of Mustard Powder
Salad:
Handful of Mixed Salad Greens
4 diced campari tomatoes
2 hard boiled eggs
Sprinkle of Feta Cheese
handful of crushed organic tortilla chips
Mix salad together. Whisk dressing together, and add to salad based on personal preference.
Very yummy. And very good for you.
Day One - Breakfast
This morning's breakfast was really simple, organic cinnamon & raisin granola with organic bananas.
