One of my favorite summertime foods is homemade cucumber salad. I got some cucumbers from my garden this year so it's a great way to make use of them.

Here is my recipe:

Peel cucumbers. Cut lengthwise and de-seed, then cut into small slices.
Cut up a small segment of onion. (I don't like a strong onion flavor, so I only use a little)
Mix cucumber and onion together and place in a GLASS container with a lid. (Don't use a metal container as it will react with the acid in the vinegar!)
Mix together equal parts of white vinegar and cold water in sufficient quantity to fill your container.
Stir in 1 part salt to 4 parts white sugar to taste.
Pour vinegar solution over cucumbers. Cover and chill in refrigerator.
