2nd September 2005 - even veggies eat toad

It’s been a busy day today. We’ve hardly stopped to draw breath. In fact, we’ve had to ‘call in the cavalry’ for tomorrow to help us with this mammoth quest we’ve undertaken. The worst of it all is that it’s all been very ugly and dirty so no photo opportunities here.

We’ve sat down once or twice for five minutes for tea and sustenance to see the TV filled with terrible things – Katrina, Iraq, a mother of a four month old child being charged with his murder, tape of one of the London suicide bombers declaring his intentions before the event and many other grizzly, gruesome stories. We’ve not heard anything ‘good’ all day.

After a soak in the bath, I decided that ‘comfort food’ was the order of the day so I made us ‘toad in the hole’ – a great British institution of a meal, made with batter and sausages. It works wonderfully well with veggie sausages too. The trick for a good veggie toad (as I’m sure for a meaty one) is to rest the batter, get the oven really hot and to pour the batter over hot sausages and into a piping hot pan. On this occasion, I didn’t let the batter rest enough so it wasn’t the best toad I’ve ever made but David declared it delicious anyway.

So, toad, red wine, caramelised onion and tomato gravy washed down with some red stuff. What could be a better way to soothe away those blues? Whether or not it makes a good potd or not will be discovered over the passing of time……. Mind you, it wouldn't be here at all if it wasn't for potd.

As I've observed before, what goes around comes around and two years ago I was also photographing supper and last year, I was begging for a dog's life.....
