T H E   O R G A N I Z A T I O N Vía Orgánica is located in San Miguel de Allende, in the central Mexican state of Guanajuato. It is a non-profit organization promoting healthy eating through organic agriculture & fair trade. Signs state their mission:                 Your purchases help:                         • Train farmers                         • The local economy                         • Your health                         • Local organic food producers

T H E   T O U R We began with breakfast at Vía Orgánica's organic foodstore/restaurant followed by a tour of their roof garden, participants were taken to their nursery workshop in the city's outskirts. After viewing organic growing methods taught to local small farmers, the tour proceeded to Hacienda Purisima de Jalpa 15 miles south east of San Miguel. Before returning to San Miguel, a stop was made at an ecological park that is being developed near the hacienda.
