This was a great day. Two batches of whisky were ready for working up. The process is pretty simple. Filter off chips and charcoal, measure proof, adjust proof and measure proof again. My cask strength is about 120 and I dilute to about 80-82 proof. Anyway, the best part of the whole process is tasting. I like to toast both neat and on the rocks. Either way, these two batches (of different formulas) were certainly passable. They will disappear from the counter without too much problem. I really need to find a group in the area that makes whisky so that I can find someone to taste my stuff and let me know what they think. I don't have a discerning palate. Anyway, it was a fun thing to do while Ginny was on a field trip to the Bishop's Palace in Galveston with her garden club. |
