I have had an interest in making Whisky for a long time. Here in the US, we are not allowed to distill our own spirits. That is a damn stupid law, but that is the way it goes. So I got some Everclear PGA and some oak chips and went to town. These are my first two batches. Not single malt Scotch quality, but drinkable over the rocks. I guess I toasted the oak chips too long. Anyway, I learned from this experiment and set up another two to age over the summer while we are in Oregon.
