If you catch clams you have to clean them. This can take a while. It is a multi-step process.The best way to do it is in an assembly line manner. The four of us got our act together and processed about 70 clams in about one hour. That was pretty good time. Here Ginny and her parents are working the line. My job was to drop them in boiling water for a few seconds then put them in ice water and remove the shells. I was also working the end of the line and arranging them on trays for freezing and eventual vacuum packing.
