Eggplant Napoleon at Quimera's

Worth a visit! www.tripadvisor.com/Restaurant_Review-g644053-d7592483-Re... I wish I knew what the green stuff was. I'd like to try to make something like this. I do know that the tomato sauce is partially sun-dried tomatoes.

Yum, and quite a production! I can't tell what the green stuff is either. Maybe you could ask the restaurant? At the winery we had dinner at for our anniversary I was telling the host to please convey to the chef how delicious some brussels sprouts were, and the chef happened to walk by, so I asked him how he made them. He gave me the secret ingredient, honey, which explained a lot.
