Microwave Caramel Corn

When I was a child and lived in Brooklyn, we used to go to Coney Island and buy freshly made caramel corn. I could almost taste it in my memory...so when a friend gave me this recipe, I was eager to try it.

Note: A friend posted this warning on my Facebook page: "Isabel, my mother read that this is very dangerous as they are putting lots of toxic chemicals in paper bags today. They also advised against ever heating cardboard with food (pizza boxes, etc.) in the oven or nuker. I want you to be safe!"

I did not used the packaged microwave corn, but popped some Jolly Time that I bought in a large bag. I had to make two batches because I didn't want the popcorn at the bottom to burn while I popped a huge batch.

Here is the recipe as it was given to me:

(1000 watt microwave)

Microwave two packages of microwave popcorn (or 4 quarts popcorn) and place in a large brown grocery bag. Luckily I had one which I had set aside a long time ago - it was a LARGE grocery bag.

In a saucepan, melt together: 1 1/2 cups brown sugar, 1/2 cup butter (one stick), 1/4 cup light corn syrup (Karo syrup), and 1/4 tsp. salt.

Bring to a boil on high and stir while boiling for approximately two minutes. Add 1/2 tsp baking soda and stir.

Pour above mixture over the popcorn in the grocery bag and stir until popcorn is coated.

Fold over the top of the bag and microwave on high for one minutes and 45 seconds. Stir or shake the bag.

Microwave on high for one minute, stir or shake.

Microwave on high for 30 seconds, stir or shake.

Pour onto greased cookie sheet (a couple with lips are helpful)

Cool and store in air-tight container.

Hint: Wooden spoon works great for stirring.

Update: I've been told grocery store bags contain harmful chemicals so it's probably best to use a large bowl that will fit in your microwave instead of a bag and just stir the contents instead of shaking them.
