Are you old enough to remember the I Love Lucy episode where she tried to go into business with a friend who could taste any restaurant food and come up with a recipe for it?

Well...I went from wondering what the "cholada" fruit salad served at a fiesta booth was and not finding anything on the web, to suspecting that "cholada" might be "colada" or "pina colada" because it tasted like coconut.

Searched the web for a fruit salad made with pina colada and found one...only it called for a premade pina colada mix and I suspected that might taste awful. Further searching yielded a mix of 6 oz. of Coco Lopez Coconut Cream from the hard liquor drink mix aisle (you have to mix it thoroughly after you remove the cover - it's very thick and very separated) and 10 oz. of Pineapple Juice (shake the can!) DO NOT USE COCONUT MILK! Blech!

I opened several cans of fruit: chunky mixed fruit, pear chunks, pineapple chunks, mandarin oranges to pour the pina colada mix over and it tasted almost exactly like the salad we had at the pupusa booth at the Fiesta Latina we attended yesteray

The can of Coco Lopez I bought contained 15+ ounces and I put the remainder in a small container in the fridge. I wonder how long I can keep it.

At any rate - the 16 ounces of mix was too much for the amount of fruit I have. I added fresh diced apples and sliced bananas. Another suggested fruit was melon. Of course, you don't have to make that much sauce, just use the proportion of 6 parts Coco Lopez to 10 parts pineapple juice.

You have to try this if you like the flavor of coconut.

I think this would be a great and easy dish to take to a pot luck.
