Elotes—boiled or roasted corn on the cob— are typical, inexpensive street food in Mexico. There is a standard repertoire of condiments, ranging from soothing crema to pungent queso añejo, lime juice and chile molido or a thin salsa. The corundas are tamal-like dumplings, shaped distinctly from standard tamales, steamed in corn husks, served with a fresh and tangy salsa and liberal lashings of "crema" and grated cheese. Corundas may be filled with chicken or sweets, or they may be "blancas"-unfilled. Pátzcuaro, Michoacán is reknowned for its superior corn-based foods.
