Cook sausages in a frying pan, remove, slice diagonally and set aside. Add cooked sliced potatoes and fry until starting to go browned,
then add sliced leeks and continue to cook on a fairly high heat until the leeks are softened and the potatoes crispy. Throw the sausages
back in and mix well along with a good dollop of creamed horseradish sauce. Season well with freshly-ground black pepper, sprinkle generously
with grated cheddar cheese and chopped parsley, and serve.
