Pork Roast Stuffed with Andouille Sausage

Louisiana

I'm going to get thrown out of this group because this was not taken today; circumstances beyond my control.
Andouille sausage is made with cut-up (not ground) pork shoulder and seasonings and garlic and smoked for many hours in a smokehouse with a pecan wood fire.
It is in a platter from the late 1800's that belonged to my paternal grandfather.

This looks absolutely delicious to me and thinly sliced too. Very nicely presented too on this old platter. If I didn't live so far away, I'd jump in the car and drive over for some.
