I can't recommend this highly enough:

This simulator is simply superb. The flight dynamics are the best I've seen yet. Even spins seem realistic. It simulates ridge, thermal and wave lift. Cross country tasks can be set and flown. You can fly online with other pilots. There is a choice of standard class, 15m class and open class ships to fly as well as the fully aerobatic fox. I hope to upload some of my own videos as well as some better screenshots soon.
On the minus side, there isn't a demo version you can download and try (are they mad?) and the scenery, nice as it is, is limited to an area in Slovenia.
Update: since I've being flying tasks online, the sim has taken on a whole new dimension. It's a great way to learn for more experienced pilots as well as have a bit of fun and competition.
Condor has moved on in leaps and bounds since this review :-). There are several sceneries now avaliable, several "Skins" for the glider exteriors, specified chamionships and much more. There is also a plane pack to be released (surely within the next 6-9 months) with addon aircraft included which have been built on request by members on the forums.
Not at the moment. The developers are working on a scenery toolkit so users can generate their own environments. There's lots more info at the Condor Scenery Forum: http://forum.condorsoaring.com/viewforum.php?f=3
