Ingredients:
- 1 cup pumpkin puree
- 1 stick melted butter
- 1 egg, beaten
- 1/3 cup water
- 1 3/4 cup flour
- 1 1/4 cup sugar
- 1 teaspoon each soda & cinnamon
- 1/2 teaspoon salt
- 1/4 teaspoon nutmeg
Filling:
- 8 ounces cream cheese, softened
- 1 egg, beatened
- 1/4 cup sugar
1 - Preheat oven to 350 degrees
2 - Combine pumpkin, butter, egg & water. Stir in combined dry ingredients. Do not overbeat. Reserve 2 cups batter, pour the rest into a 9 x 5 loaf pan.
3 - Combine cream cheese, sugar & egg. Pour on top. Spoon on reserved batter. Cut through batter with a knife several times for a swirled effect.
4 - Bake at 350, one hour and ten minutes, depending on oven.
