Recipe
3 Cups flour
1 tab. plus 1 teas. Pumpkin Pie Spice
2 teas. baking soda
1-1/2 teas. salt
3 cups sugar
1 cup salad oil
4 larg. eggs
1 can (15oz) 100% pure pumpkin
1/2 cup OJ or water
1 cup sweetened dried, fresh or frozen cranberries
Preheat oven to 350F. Grease and flour two 9 x 5" loaf pans. Combine flour, pumpkin pie spice, baking soda & salt in a large bowl. Combine sugar, pumpkin, eggs, vegetable oil & OJ in a large mixer bowl and beat until just blended. Add pumpkin mixture to flour mixture, stir until just moistened. Bake for 60 -65 minutes or until wooden pick inserted comes out clean. Cool in pans for 10 mins. Remove to wire racks to cool completely
