Russula dry cap6023.jpg

Westchester Wilderness Trail. Pound Ridge

I don't know which species of Russula this is. I do know it is one of the 'dry caps', which Gary Lincoff has described as edible. I took a tiny bite from the edge and it was in fact mild tasting. When I try thiswith the shiny capped Russulas, they are usually very bitter. If you try this technique with Russulas or Lactarii, be sure to spit out the flesh after your taste-test. In general, russulas are not toxic, except for the shiny-capped Russula emetica ('the 'Sickener) which grows in moss under conifers.
