Banana Nut Bread.

This recipe is from "7 Secrets Cookbook" by Neva & Jim Brackett.

1 cup whole wheat flour
1/2 cup unbleached flour
3/4 teaspoon salt
1 tablespoon Ener-G Baking Powder
1/3 cup chopped walnuts (or pecans)
1/2 cup coconut milk or Cashew Cream
(For Cashew Cream: blend on high for 2 minutes 1 cup cashews & 1 cup water)

1/3 cup honey (or 12 cup sugar and 2 Tbsp. water)
1/2 cup mashed ripe banana

Mix dry ingredients in a medium-sized bowl. Add nuts.
Mix remaining ingredients in a 2-cup measuring cup and add water
if needed to equal 1 cup of liquid.
Briskly stir liquid into dry ingredients, and pour into loaf pan
lined with parchment paper.

Bake at 350F degrees for about 40-45 minutes, or until knife
inserted in center comes out clean.

(Makes 1 loaf)

Nice shot of the bananas, pecans and banana bread. My favorite is banana bread cut in long thin slices, spread with cream cheese and put together like a sandwich. Nice served with tea...
