Sauté chopped shallots until starting to soften, add a Tbs curry powder and flaked smoked mackerel, stirring to heat well,
then add chopped tomatoes and cooked white rice. Season well, cover and heat until everything is piping hot. Stir in
chopped parsley and serve with hard-boiled eggs and lots of freshly ground black pepper.
