Fry (or grill) pork sausages, cut into diagonal slices and set aside. Put spinach into a plastic bowl, cover with cling film and cook in a microwave oven on high
for a couple of minutes, drain and set aside. Fry sliced shallots and garlic until transparent, add tomatoes cut into wedges and cook until beginning to soften.
Add drained canned butter beans, the cooked spinach and sliced sausage. Mix all together, tip into a casserole dish, make a couple of wells with the back of a
spoon and crack in a couple of eggs. Season with salt and pepper and bake in a 180°C oven for 9-10 minutes, until the eggs are cooked.
