A doctor once told me, many years ago, that the best diet for losing weight was steak and green beans! So, here's my take on that.
Quite a simple dish – just season a fillet steak with salt and lots of coarsely ground black pepper and sear for 2-3 minutes each side
until nicely browned and done to your taste (I like mine still very pink in the middle). Remove and let rest while you finish the sauce.
In the same pan, sauté a finely chopped shallot, then add a small glass of red wine and a Tbs of balsamic vinegar. Boil down to a syrupy
liquid, stir in a small knob of butter and pour over the steak. This is for one serving, by the way!
