After doing the first image, I did it again, a bit brighter and less saturated.

opened in RawShooter Essentials (RSE). Used alt+e for auto adjust, then tweaked. Final settings were:

shadow contrast 42
highlight contrast -75 (this is what fixes the sky)
saturation 27

all the rest left at 0
