Immediately following the Simbang Gabi mass, a popular early breakfast fare is Bibingka, a "rice flour and egg based cake, cooked using
coals on top and under ..." ( http://en.wikipedia.org/wiki/Philippine_Christmas_traditions#Misa_de_Gallo_.28Dec._16-24.29 ) .

Using banana leaves as a plate, the bibingka is topped by butter and/or kesong puti (white goat's cheese) with slices of itlog na maalat
(red salted duck's egg) and grated coconut. It is best eaten with a hot cup of salabat (ginger tea) or tsokolate eh! (thick Spanish cocoa).

TRIVIA: One thing about US actor/comedian Rob Schneider (he's half Filipino!) is that he always incorporates Pinoy culture - and his mom! -
in his movies. If you watch closely, one whole scene in the movie "Deuce Bigalow: Male Gigolo" is dedicated to the lowly bibingka! :-D
