Say hello to the newest member of the family. An Original Bradley Smoker in Stainless Steel. That's hot!
I need to purchase a table and get this thing off the floor. I'm not that young anymore!
The belly of the beast. The smoker is being seasoned. Don't worry, food will be loaded this weekend.
First attempt. We cooked a couple of chickens. 2 hours of smoke. 4 hours total cooking time.
Carnitas - Our favorite dish! Pork butt marinated in salsa verde, cilantro, adobo & paprika.
Into the smoker for about an hour of hickory.
Time to try something different for Thanksgiving. Turkey breast with rib rub.
Wrapped in bacon!

Almost 4 hours later and this is what we've got.
Very juicy with a wonderful flavor. YUM!!
Cornbread, stuffing, braised red cabbage & turkey. Happy Thanksgiving.
This has nothing to do with smokin' except that my smokin' wife made it. Fresh pumpkin pie.

Hello, Aunt Betty. Carnitas means "little meats". It's small chunks of pork that are cooked for a long time. Traditional carnitas are usually fried, but I decided to smoke mine.
