I think you made and excellent decision by going with BW, as the colours of raw flesh might not be as easy on the ey.

You get my vote as well. You really do well with portraits and they are all fabalous, but what appeals to me is the hard work displayed in here and how this makes me feel as if I traveled back in time. Great job.

this is a good shot. it will be a bit gruesome to some, but i think it's pretty evident that the man looks like a nice man, you can see it in his face. his nature contrasts with his line of work as you've pointed out, and i think that makes the picture. the skinning is being done so cleanly that you also get the impression that he is skilled and focused at his work.
