John is a butcher and farmer. He and his family own and run Maugers Meats in the Southern Highlands of New South Wales. He is almost the story book butcher - a big laugh, sense of humour and a love of people and food. As I watched him work with the meat, to me it looked like he was playing an musical instrument.
